Easy Poached Fish

 

A very quick and easy poached fish lunch or dinner. Simple ingredients with season fresh green vegetables and chicken bone broth

Ingredients

  • 2 spring onions, finely chopped

  • 2 in season pieces of organic white fish (filleted)

    — Halibut or cod

  • 500 ml chicken bone broth or vegan broth

  • 1 lemon, juiced and zested

  • 2 leeks, white part only

  • 100g of tenderstem brocolli tips

  • 100g of Green pak choi

  • handful of flat leaf parsley

  • 2 red chillies

Directions

Heat a tablespoon of olive oil over a low heat. Add the spring onions, leeks and cook until translucent which would be approximately 4-5 minutes. Stir in the chicken bone broth, lemon juice, lemon zest, parsley and broccoli. Bring to a slow simmer for approximately 4 minutes.

Prepare the fish by seasoning on both sides with salt and pepper. Add the fish and Pak Choi to the saucepan, cover and cook for approximately anther 8 minutes or until the fish is flaky and opaque and the Pak Choi is nicely wilted.

Remove the pan from the heat, spoon all the ingredients into a deep bowl. Add a few sprigs of parsley, a squeeze of lemon and some chopped red chilli.
